The new wine ice cream flavours have been developed by a team of Brisbane chefs

Guests who visited Kingsley Grove Estate’s cellar door were able to try something new over the weekend: four wine-flavoured ice creams crafted by a team of chefs.

The new ice creams made their debut at the Regional Flavours food and wine festival held at Southbank in Brisbane on July 15-16, and became available at Kingsley Grove’s winery last week.

“We started making and selling our ice cream about 18 months ago,” winemaker Simon Berry said.

“We blended our wines with traditional flavours to produce four different flavour combinations, and we’ve been making them in house ever since.”

Recently, though, the family owned business decided to take the wine ice creams to the next level.

They began working with Brisbane based Lick! Ice Cream to refine the flavour combinations and bring a chef’s expertise to the wine ice creams, working carefully to ensure the flavours of Kingsley Grove’s wines were matched with ingredients that were satisfyingly complimentary.

“We have achieved this by making sure key things like acidity, sweetness and texture work in harmony with each wine,” Simon said.

The work took several months and has resulted in four new flavour combinations:

  • Dark Chocolate and Fat Fox Port
  • Shiraz and Raisin
  • Merlot and Vanilla Bean
  • Verdelho and Lemon Sorbet (dairy free)

The ice creams are all natural and free from stabilisers, emulsifiers and additives, and received an overwhelmingly positive reaction at Regional Flavours.

“All the wines used in these ice creams are hand crafted at Kingsley Grove Estate and all the flavour combinations have been carefully blended to perfectly complement the flavours of our wines,” Simon said.

Lick! work closely with growers and producers like Kingsley Grove to ensure the ice creams use Queensland’s finest produce.

The ice cream base consists of full cream, eggs and sugar, and all ingredients used in the ice cream are 100 per cent Australian produced and made.

Kingsley Grove Estate is located at 49 Stuart Valley Drive, just off the Bunya Highway south-west of Kingaroy.

The winery’s cellar door is open from 10:00am to 5:00pm daily, and in addition to wines and the new wine ice-creams it also offers wood-fired pizzas and cheese platters on weekends and public holidays.
