Maidenwell Hotel’s new chef Dallas Tacey has practised his art all over Australia, in Europe, in America and in Thailand; his dream was to open a “Modern Australian Fusion” restaurant in Denmark. But then he met a woman …

And as his friend lived in the South Burnett, Dallas – who prefers to be known as “Chef D” – found himself exploring the local area. Dropping into the Maidenwell Hotel recently, he asked licensee Gavin Jones if he needed a chef.

Dallas told southburnett.com.au today the dream of the Danish restaurant was on the backburner. His aim now is to see the Maidenwell Hotel filled every night with diners exploring his new menu.

His specialities include Texas barbecue ribs, twice-cooked pork belly and Thai oysters Rockefeller.

Dallas, who has been a chef for 24 years, says that cooking to him is not a job; it’s an art.

“Everything has to be sex on a plate,” he said.

Gavin – and his customers – are impressed with the meals that Dallas has been turning out since he started work a few days ago.

“It’s good, real good,” Gavin said. “It’s food that’s never been served like this in Maidenwell. Everyone who has tried it has been over the moon.”

The hotel now plans to hold regular “culture nights” featuring menus from around the world.

The first will be held in early May and will highlight Thai food.

Also planned are Mexican and Japanese nights.

However, the hotel’s regulars need not fear that the old staples are disappearing.

“It’s a pub and people expect pub food; so there’ll be pub food plus an added menu,” Dallas said.

And the Maidenwell Hotel’s popular pizzas will also be staying.

The Maidenwell Hotel’s kitchen is open from noon-2:00pm for lunch from Wednesday to Sunday; and for dinner from 6:00pm-9:00pm on Wednesdays to Saturdays. At other times, the kitchen will be opened for groups of 10 or more.
