{"id":97937,"date":"2015-02-28T12:22:51","date_gmt":"2015-02-28T02:22:51","guid":{"rendered":"http:\/\/southburnett.com.au\/news2\/?p=97937"},"modified":"2015-02-28T12:24:47","modified_gmt":"2015-02-28T02:24:47","slug":"the-sweet-and-the-sour","status":"publish","type":"post","link":"https:\/\/southburnett.com.au\/news2\/2015\/02\/28\/the-sweet-and-the-sour\/","title":{"rendered":"The Sweet And The Sour"},"content":{"rendered":"<p><a href=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d.jpg\"><img loading=\"lazy\" class=\"alignright size-full wp-image-77803\" title=\"Ford On Food\" src=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d.jpg\" alt=\"\" width=\"210\" height=\"350\" srcset=\"https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d.jpg 210w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d-180x300.jpg 180w\" sizes=\"(max-width: 210px) 100vw, 210px\" \/><\/a><strong>February 27, 2015<\/strong><\/p>\n<p><strong>by Jason Ford<\/strong><br \/>\n<strong><a href=\"http:\/\/fordonfood.com.au\/\" target=\"_blank\">Ford on Food<\/a><\/strong><\/p>\n<p>Balsamic vinegar is very popular because of its rich, sweet characteristics, and it features prominently in many Italian recipes.<\/p>\n<p>It is so sweet, in fact, that it can also be used in desserts.<\/p>\n<p>Unlike most vinegar, Balsamic vinegar is not derived from wine but from newly pressed grape juice.<\/p>\n<p><strong>In its most traditional form, balsamic vinegar is made from the Trebbiano grape, which flourishes in the Modena region of Italy.<\/strong><\/p>\n<p>It is aged by transferring between barrels made from oak, chestnut, juniper or cherry, ash and finally mulberry. <\/p>\n<p>The transference from one barrel to the other is known as &#8220;rincalzo&#8221;, and it normally takes place in spring.<\/p>\n<p>Throughout the prolonged aging process the juice gradually evaporates, requiring incrementally smaller barrels. <\/p>\n<p><strong>Due to the dramatically reduced yield from the original volume of grape juice, balsamic vinegar is quite expensive.<\/strong><\/p>\n<p>The most authentic balsamic vinegar, aceto balsamico tradizionale di Modena, is one of the most expensive liquids on earth. <\/p>\n<p>It is aged and blended for up to fifty years and each bottle is signed and numbered.<\/p>\n<p>Anyway, this week I have two very simple recipes for you that use balsamic vinegar that I hope you&#8217;ll enjoy.<\/p>\n<h2 style=\"text-align: center;\"><strong>* * *<\/strong><\/h2>\n<h2><strong>Balsamic Vinaigrette<\/strong><\/h2>\n<p><a href=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/02\/balsamic-bottle-and-strawberry-640x640.png\"><img loading=\"lazy\" src=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/02\/balsamic-bottle-and-strawberry-640x640.png\" alt=\"\" title=\"balsamic-bottle-and-strawberry-640x640\" width=\"300\" height=\"300\" class=\"alignright size-full wp-image-97938\" srcset=\"https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/02\/balsamic-bottle-and-strawberry-640x640.png 300w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/02\/balsamic-bottle-and-strawberry-640x640-150x150.png 150w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/02\/balsamic-bottle-and-strawberry-640x640-50x50.png 50w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>Drizzle this simple and delicious dressing on your favorite garden salad, which goes great with Italian food.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 small garlic clove\n<li>1 tablespoon balsamic vinegar\n<li>1\/2 teaspoon Dijon mustard\n<li>75ml extra virgin olive oil\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Blend garlic clove with a little salt\n<li>Add balsamic vinegar and half a teaspoon of dijon mustard\n<li>While continuing to blend, gradually add extra virgin olive oil until a smooth emulsion is formed\n<li>Season the dressing with salt and pepper\n<\/ul>\n<p>&nbsp;<\/p>\n<h2><strong>Balsamic Strawberries<\/strong><\/h2>\n<p>One of my all time favourite uses for balsamic vinegar is with strawberries. Yes, you read correctly! The following is a pretty standard and well-known recipe. You could also add a little cracked black pepper.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>500g  strawberries\n<li>1 tablespoon balsamic vinegar\n<li>3 tablespoons icing sugar\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Wash and drain strawberries, then remove the hull\n<li>Cut the strawberries into quarters and place in a bowl\n<li>Gently toss the strawberries with the vinegar and sugar\n<li>Refrigerate for 30 minutes before serving with double cream\n<\/ul>\n<ul>\n<li><strong><a href=\"http:\/\/southburnett.com.au\/news2\/ford-on-food\/\">Read more Ford On Food columns<\/a><\/strong><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Balsamic vinegar is very popular because of its rich, sweet characteristics, and it features prominently in many Italian recipes.<\/p>\n","protected":false},"author":9,"featured_media":97938,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":[],"categories":[595],"tags":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v19.11 -
