Each day, millions of people around the world use peanut oil in their kitchens.<\/p>\n<p>It could be best described as clear oil pressed from peanuts. It&#8217;s used in salad dressings and especially prized for its frying qualities.<\/p>\n<p>Peanut oil has a high smoke point (approximately 232<sup>o<\/sup>C), which is super-hot and great for wok frying. Because of the high smoke point, peanut oil can cook food quickly and very crisp, without burning and tasting bitter.<\/p>\n<p>However there is another kind of unrefined Chinese peanut oil which is darker in colour, has a distinctive peanut flavour and a much lower smoke point (approximately 160<sup>o<\/sup>C).<\/p>\n<p>Unrefined peanut oil is a cold, first-pressed variety, much like a good quality extra virgin olive oil. It can taste a little strong, though.<\/p>\n<p>Modern high oleic variety peanuts produce oil with higher levels of mono-unsaturated fatty acids. <\/p>\n<p>It\u2019s believed this makes the oil healthier because mono-unsaturated fatty acids have been shown to reduce cholesterol levels.<\/p>\n<p>Peanut oil has a long shelf life compared with many other oils, as high polyunsaturated fatty acids are prone to oxidation and spoilage.<\/p>\n<p>So, before you fry your next meal in lashings of rendered animal fat (with a complimentary cardiac arrest in every serve), consider peanut oil as a healthier alternative.<\/p>\n<h2 style=\"text-align: center;\"><strong>* * *<\/strong><\/h2>\n<h2><strong>Thai Beef and Glass Noodle Salad<\/strong><\/h2>\n<p><a href=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/01\/peanut-oil.png\"><img loading=\"lazy\" src=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/01\/peanut-oil.png\" alt=\"\" title=\"peanut-oil\" width=\"300\" height=\"300\" class=\"alignright size-full wp-image-93303\" srcset=\"https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/01\/peanut-oil.png 300w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/01\/peanut-oil-150x150.png 150w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/01\/peanut-oil-50x50.png 50w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>80ml lime juice\n<li>2 tbsp fish sauce\n<li>20ml extra virgin peanut oil\n<li>2 tsp brown sugar\n<li>1 clove garlic, crushed\n<li>1 tbsp coriander, finely chopped\n<li>1 lemongrass stalks, finely chopped\n<li>2 small red chilies, finely chopped\n<li>2 rib fillet, 200 g each\n<li>150g mixed leaf lettuce\n<li>1\/2 red onion, finely sliced\n<li>15g coriander leaves, torn\n<li>7g  mint leaves, torn\n<li>250g cherry tomatoes, halved\n<li>1 Lebanese cucumber\n<li>150g toasted peanuts\n<li>50g glass noodles, soaked\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Mix together the lime juice, fish sauce, palm sugar, garlic, chopped coriander, lemon grass and chilli until the sugar has dissolved.\n<li>Preheat a barbecue and char grill to medium-high direct heat. and cook the steaks for 4 minutes or until medium.\n<li>Let the steaks cool slightly, and then slice thinly across the grain.\n<li>Put the salad leaves, onion, coriander leaves, mint, tomatoes, cucumber and peanuts in a large bowl, add the beef and dressing, toss them together and serve immediately.\n<\/ol>\n<p>Serves 4.<\/p>\n<p><strong>Note:<\/strong> This recipe can be adjusted to suit your individual taste. Adding some smaller birds eye chillies with the seeds left in will make a more potent spicy version. Garlic can be left out if preferred. Fresh coriander can be added for a more Thai-style sauce.
