archaeological evidence suggests that pancakes are probably the earliest and most widespread cereal food eaten in prehistoric societies. <\/p>\n<p>A pancake is a flat cake &#8211; often thin and round &#8211; prepared from a starch-based batter that may also contain eggs, milk and butter.<\/p>\n<p>It&#8217;s cooked on a hot surface such like a frying pan or griddle, often with oil or butter. <\/p>\n<p>In the UK, pancakes are often unleavened and resemble a crepe.<\/p>\n<p>But US pancakes use a raising agent &#8211; usually baking powder.<\/p>\n<p>They may be served at any time with a variety of toppings or fillings including jam, fruit, syrup, chocolate chips, or meat. <\/p>\n<p>In the USA they are typically considered to be a breakfast food. <\/p>\n<p>In Britain and other Commonwealth countries, they are associated with Shrove Tuesday (&#8220;Pancake Day&#8221;) when perishable ingredients had to be used up before the fasting period of Lent began.<\/p>\n<h2 style=\"text-align: center;\"><strong>* * *<\/strong><\/h2>\n<p><strong>Last weekend &#8211; in conjunction with the Taabinga Rotary Club &#8211; I made pancakes at O&#8217;Neil Square in Kingaroy to help raise awareness about Rotary&#8217;s worldwide campaign to stamp out polio.<\/strong><\/p>\n<p>Rotary clubs around the world have been working to &#8220;make polio history&#8221; for more than 30 years.<\/p>\n<p>In 1985, Rotary launched its PolioPlus program with the ambitious goal to end polio worldwide.<\/p>\n<p>At the time, polio crippled more than 350,000 children per year in 125 countries. <\/p>\n<p>These days, only Pakistan, Afghanistan and Nigeria still have endemic polio and in 2014, there were fewer than 360 polio cases in the world.<\/p>\n<p>But the fight isn&#8217;t over yet, and Rotary is still raising funds for immunisation programs.<\/p>\n<p>In case you missed my demonstration, here&#8217;s one of my favourite pancake recipes.<\/p>\n<h2 style=\"text-align: center;\"><strong>* * *<\/strong><\/h2>\n<h2><strong>Jason\u2019s Buttermilk Pancakes<\/strong><\/h2>\n<p><a href=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/10\/pancakes300x300.jpg\"><img loading=\"lazy\" src=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/10\/pancakes300x300.jpg\" alt=\"\" title=\"pancakes300x300\" width=\"300\" height=\"280\" class=\"alignright size-full wp-image-125016\" \/><\/a><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 egg\n<li>2 tbsp caster sugar\n<li>1\/4 tsp bicarbonate of soda\n<li>1 cup buttermilk\n<li>1 cup self-raising flour\n<li>2 tbsp butter, melted\n<\/ul>\n<p><strong>Method:<\/strong> <\/p>\n<ol>\n<li>In a bowl, whisk together the egg and castor sugar\n<li>Sift together the self-raising flour and bicarb\n<li>Melt butter and leave to cool\n<li>Slowly add the flour and buttermilk alternately to the egg and sugar mix\n<li>Then whisk in the cooled, melted butter\n<li>Place tablespoons of batter onto a greased frypan on medium heat\n<li>When the pancake bubbles on one side, flip it and cook the other side\n<\/ol>\n<p>Serve warm pancakes with Cr\u00e8me Fraiche, fresh raspberries and maple
