so they are often taken for granted.<\/strong><\/p>\n<p>Which is a pity, because they have wide culinary versatility, great nutritional value, are inexpensive and indispensable in the kitchen.<\/p>\n<p>Did you know there are over one hundred varieties of carrot species?<\/p>\n<p>There are a range of colours available &#8211; I personally have cooked with white, yellow, orange, pink, red and purple carrots.<\/p>\n<p>When carrots are pulled from the ground while they are still tiny, they are referred to as baby (or new season) carrots.<\/p>\n<p>Baby carrots are tender, don&#8217;t need to be peeled and are wonderful eaten raw in salads (although they are also amazing saut\u00e9ed in butter).<\/p>\n<p>The larger, mature carrots are a little more fibrous and best grated if eaten raw but are usually cooked to make them tender.<\/p>\n<p>As carrots mature, they take on a more sweet and savoury flavour profile and add a depth of flavour and savoury body to stocks, soups, stews or braises.<\/p>\n<p>Carrots can be boiled, steamed, pureed, roasted, fried in tempura batter or simply eaten raw as a snack.<\/p>\n<p>They can also be eaten in desserts, such as carrot cake and muffins.<\/p>\n<p>Carrots are also popular in healthy vegetable juices as they contain high levels of Vitamin A, Carotene, Vitamin C and antioxidants.<\/p>\n<p>Carrots can be stored in the refrigerator for many weeks, however if they are kept too long they may become limp or start growing roots.<\/p>\n<h2 style=\"text-align: center;\"><strong>* * *<\/strong><\/h2>\n<h2><strong>Carrot and Chickpea Soup<\/strong><\/h2>\n<p><a href=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/05\/carrot-baby-mixed-bunch1.png\"><img loading=\"lazy\" src=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/05\/carrot-baby-mixed-bunch1.png\" alt=\"\" title=\"carrot-baby-mixed-bunch1\" width=\"300\" height=\"300\" class=\"alignright size-full wp-image-105451\" srcset=\"https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/05\/carrot-baby-mixed-bunch1.png 300w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/05\/carrot-baby-mixed-bunch1-150x150.png 150w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2015\/05\/carrot-baby-mixed-bunch1-50x50.png 50w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 teaspoons olive oil\n<li>1 leek, chopped\n<li>500gm carrots (frozen sliced carrots are easiest)\n<li>4 cups chicken stock\n<li>300gm can chickpeas, undrained\n<li>1\/2 cup orange juice\n<li>1\/2 teaspoon mixed spice\n<li>1\/3 cup natural yoghurt, to serve\n<li>2 teaspoons chopped fresh tarragon, to serve\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat the oil in a large saucepan over medium heat; add leek and carrot and cook, stirring, for 10 minutes or until soft\n<li>Add juice, stock, chickpeas and mixed spice and bring to the boil, then reduce heat to medium\/low and simmer, covered, for 15 minutes\n<li>Combine the yoghurt and tarragon\n<li>Blend the soup using a food processer until smooth, return to pan, and season with salt and pepper\n<li>Stir over heat until heated through\n<li>Ladle into bowls, top with the tarragon\/yoghurt blend\n<\/ol>\n<ul>\n<li><strong><a href=\"http:\/\/southburnett.com.au\/news2\/ford-on-food\/\">Read more Ford On Food columns<\/a><\/strong><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Carrots have the unenviable status of being common;
