{"id":104257,"date":"2015-04-24T22:22:19","date_gmt":"2015-04-24T12:22:19","guid":{"rendered":"http:\/\/southburnett.com.au\/news2\/?p=104257"},"modified":"2015-04-24T22:23:54","modified_gmt":"2015-04-24T12:23:54","slug":"bring-home-the-bacon","status":"publish","type":"post","link":"https:\/\/southburnett.com.au\/news2\/2015\/04\/24\/bring-home-the-bacon\/","title":{"rendered":"Bring Home The Bacon"},"content":{"rendered":"<p><a href=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d.jpg\"><img loading=\"lazy\" src=\"http:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d.jpg\" alt=\"\" title=\"Ford On Food\" width=\"210\" height=\"350\" class=\"alignright size-full wp-image-77803\" srcset=\"https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d.jpg 210w, https:\/\/southburnett.com.au\/news2\/wp-content\/uploads\/2014\/08\/ford-on-food-d-180x300.jpg 180w\" sizes=\"(max-width: 210px) 100vw, 210px\" \/><\/a><strong>April 24, 2015<\/strong><\/p>\n<p><strong>by Jason Ford<\/strong><br \/>\n<strong><a href=\"http:\/\/fordonfood.com.au\/\" target=\"_blank\">Ford on Food<\/a><\/strong><\/p>\n<p><strong>Bacon is the main reason why I\u2019ve never become a vegetarian.<\/strong><\/p>\n<p>I think bacon is one of the most extraordinarily delicious foods known to humankind.<\/p>\n<p>Although I\u2019d agree that bacon goes with just about everything, I wouldn\u2019t recommend eating it to excess as it contains a large amount of sodium and fat.<\/p>\n<p>Bacon is made from various cuts of pork (generally the belly) which is cured in a liquid brine or dry salt packed. <\/p>\n<p>Then it is commonly infused and showered with liquid smoke, then baked.<\/p>\n<p>The more traditional bacon is cooked in a smoking oven or boiled.<\/p>\n<p>Bacon is often firmed up by refrigeration for various periods of time, so it can be thinly sliced into rashers before packaging.<\/p>\n<p>Mass-produced bacon is often heavily processed and contains considerable amounts of artificial flavourings and preservatives. such as sodium nitrite.<\/p>\n<p><strong>For a more traditional and less processed version of bacon, it pays to know your local butcher, many of whom will produce their own home-made bacon.<\/strong><\/p>\n<p>There are also many boutique smokehouses that specialise in niche charcuterie products, such as richly double or triple smoked bacon. <\/p>\n<p>Some of the best smoked bacon rashers I ever had was bacon produced by the local butcher.<\/p>\n<p>Typically, the consumer will cook the bacon rashes before eating it.
